If you are wanting to try and convert a recipe to a healthy version, here are some tips:
- When converting all purpose or other flours to whole wheat the rule of thumb is 7/8 cup whole wheat to 1 cup flour. I know that can be daunting to do 7/8 of a cup which would be a flat leveled off measuring cup less two tablespoons or what I do, I sift one cup rather than pack it down and level it off.
- When converting cocoa powder to cacao powder it is measure to measure but keep in mind, cacao has a more bitter chocolate taste so you may need to increase the sweetness of the recipe. Sample the recipe before you add eggs to make sure it is sweet enough, sometimes a tablespoon or two of agave, honey or maple syrup with need to be added.
