If you are wanting to try and convert a recipe to a healthy version, here are some tips:

  1. When converting all purpose or other flours to whole wheat the rule of thumb is 7/8 cup whole wheat to 1 cup flour.  I know that can be daunting to do 7/8 of a cup which would be a flat leveled off measuring cup less two tablespoons or what I do, I sift one cup rather than pack it down and level it off.
  2. When converting cocoa powder to cacao powder it is measure to measure but keep in mind, cacao has a more bitter chocolate taste so you may need to increase the sweetness of the recipe.  Sample the recipe before you add eggs to make sure it is sweet enough, sometimes a tablespoon or two of agave, honey or maple syrup with need to be added.
